Singapore, 23 April 2014 – Pacific Marketplace spices up an otherwise staid meal – lunch - with an innovative sandwich menu available daily from 11am to 3pm. Freshly-baked at the hotel daily, the breads and sandwiches were created based on the five flavour profiles – sweet, salty, sour, bitter and umami.

“Bread is such an incredibly versatile ingredient that can be paired with an infinite number of toppings and sandwich fillings. We really wanted to create a selection of sandwiches with distinctive flavours for guests to select from. The sour dough is a classic, chewy in texture and slightly tart. The fig and apricot bread has sweet nectar notes while the broccoli, carrot and cheese bread packs the delicious salty flavor of Gruyere cheese in the overall taste. Creating the bitter and umami notes were slightly more challenging; after extensive tastings, we selected charcoal and squid ink because these left a mildly bitter aftertaste, similar to that of Coffin Bay oysters. We chose sun-dried tomatoes to create umami as these packed the most punch and savoury flavour.” says Culinary Director, Sumanth Das.

After the breads were developed, taste-tests commenced with sandwich ingredient staples like chicken, tuna and charcuterie for the most complementary pairings. The smoky sweetness of grilled chicken was deemed to go best with the fig and apricot bread, further enhanced by the smoky savoury olive tapenade. Tuna and sourdough bread, a traditional pairing, gets a delicious twist with the addition of creamy ripe avocado. Arugula and pesto layered with smooth Italian buffalo mozzarella with broccoli, carrot and cheese bread is a match made in heaven. The slight sweetness of crabmeat brought out the complexity of charcoal squid ink bread perfectly. Made at the hotel’s own butchery, Pan Pacific salami and mortadella paired with Italian Provolone cheese and sweet Pepperoncino are layered on sun-dried tomato Focaccia bread for sweet- salty-savoury flavours in every bite. All the sandwiches are served with home-made Parmesan Cheese Crisps and a garden salad.
