Earl Grey Cherry Gateau Cake
In this luxurious mousse cake, lovely Valrhona Tanariva 33% milk chocolate is infused with aromatic Earl Grey Tea, then balanced with tarty Griotte Cherries Compote and a delicately crispy Feuilletine base.

Pu-erh Longan Éclair
Pastry Chef Eddy Lau puts a fragrant spin on the classic Éclair with this delicate choux pastry sumptuously filled with fresh creamy Pu-Erh Scented Mousse and sweet longan flesh.
