The Lunar New Year a la carte menu includes top favourites such as Braised Fresh Fish Maw with Spiked Sea Cucumber in Oyster Sauce, Braised Scallops and Large Prawns with Dumplings in Sichuan Bean Paste, and Braised Bird’s Nest Soup with Crab Roe and Crab Meat.

With the ongoing trend of mala dishes, Executive Chef Zeng Feng's Deep-fried Spare Ribs in Sichuan Spices (available from SGD48), simmered over small fire for 40 minutes and deep-fried to a tatalising golden-brown along with peppercorn, fresh green and red chillies, is sure to be a hit for the younger generation. 

Literally meaning "a jar of meat", the Premium Sichuan Claypot Treasures (available at SGD438) is a traditional dish from Sichuan and is found in every household during the Lunar New Year. Signifying abundance, the dish includes premium ingredients such as abalone, fish maw and sea cucumber that is simmered over a minimum of three hours in an earthen jar before serving.
