Toss to a year of abundance and good fortune with Hai Tien Lo’s Flourishing Prosperity Yusheng featuring a lavish spread of Lobster, Alaskan Crab, Hokkaido Scallop, Norwegian Salmon and Japanese Kelp. Guests can select from a range of six different Yusheng platters, each auspiciously named, presenting a decadent selection of fresh seafood. Hai Tien Lo’s Yusheng platters are priced between $38 and $228 and are available in both small and large sizes.

Chinese New Year is traditionally centred on joyous gatherings with loved ones and Hai Tien Lo’s selection of two Pen Cai gives guests more reason to celebrate. Symbolising abundance and good fortune, these decadent pen cai present a magnificent range of fresh seafood and premium ingredients including Whole Abalone, Sea Cucumber, Prawn and Fish Maw. Guests who select Blossoming Prosperity Pen Cai and Golden Opulence Pen Cai, designed for six and 10 guests respectively, will enjoy complimentary Koi Fish Nian Gao with every order. Priced from $368 for six guests, the pen cai is available for both dine-in and takeaway.

Celebrate the most important Chinese festival at Hai Tien Lo as Master Chef Lai Tong Ping (黎东平) crafts an extravagant selection of culinary creations and eight prix fixe menus to commemorate the traditional festival. Available from 2 February until 5 March 2015, the auspiciously named prix fixe menus (from $108 per person) are designed for dine-in groups of at least two guests. Share the joy and well wishes over a gathering of gastronomic delights and signature dishes including flavourful and succulent Braised Whole Abalone with Sea Cucumber and Dried Oyster, Double-boiled Fish Maw and Dried Scallops in Premium Chinese Wine and Barbecued Crispy Whole Suckling Pig with a crackling finish.

In a culinary tribute to the Lunar New Year, Keyaki presents an epicurean twist to the enduring tradition of Lo Hei with two exquisite Yusheng presentations. Comprising seasonal vegetables and exquisite tuna, salmon and yellowtail sashimi, the dishes are uplifted with a liberal dusting of gold and silver flakes, conveying wishes of wealth and health for the New Year, while adding an auspicious lustre to the dish.

The Wafu Yusheng ($118) serves four guests; while the Fu Yusheng ($298) is enhanced with the rich flavour of uni (sea urchin) and creamy texture of lobster, serves 10 guests. Both selections are available exclusively for dine-in at Keyaki from 5 February to 5 March 2015.

Edge heralds the Spring Festival for the first time with a decadent dinner menu featuring traditional Lunar New Year delicacies and contemporary interpretations of classic Chinese dishes. From 18 February to 5 March 2015, guests may celebrate the New Year with family and friends over highlights including Whole Chinese Roast Pork with Kumquat Compote, Teochew Cold Crab and Shanghainese Nian Gao with XO Sauce, and fragrant Lotus Leaf Glutinous Rice.

Those looking for a unique twist will enjoy presentations including Bak Kwa and Pineapple Pizza, Seafood Chowder with Baby Abalone in Puff Pastry, and Deep-fried Nian Gao with Taro Spring Roll. Conclude the evening on a sweet note with traditional desserts such as Teochew Yam Paste with Gingko Nuts and Pumpkin, Mango Sago with Pomelo, Mandarin Orange Cake and a selection of Chinese New Year goodies.
