About Peppermint
Peppermint welcomes you into nature's embrace with sights of greenery and a healthful farm-to-table cuisine that offers the best flavours from around the world.
The unlimited dining experience provides a wide variety of wholesome Asian and International favourites, freshly prepared at the open display kitchen. With a renewed focus on conscious dining, Peppermint’s new menus include plant-based options and the use of sustainably and locally sourced ingredients. In July 2024, Peppermint achieved the Highest Tier in the Farm-to-Table Recognition Programme by the Singapore Food Agency, procuring at least 15% of local produce from three or more food categories.
Step out to the terrace and discover our very own Urban Farm, where more than 60 varieties of herbs, edible flowers and vegetables are grown and used as garnishes, aromatics and salads for food, as well as drinks, such as tea and infused water. Dine in a garden setting and savour the natural flavours of our fresh harvest.
Peppermint is open daily, from 6:30am until 10:00pm.

Peppermint's buffet stations and kitchen are halal-certified. Children below the age of 6 dine free.
Guests are encouraged to be dressed in smart casual attire with appropriate footwear. Shorts and flip-flops are not permitted.
Dine-in guests are eligible for complimentary parking at Marina Square Shopping Centre (one single-entry ticket, to be utilised within 2 hours from issue).

Lunar New Year Prosperity Collection (3 January Dinner until 12 February 2025)
Available from 3 January (Dinner) until 12 February 2025, usher your way to a prosperous Lunar New Year at Peppermint, as Chef de Cuisine Leon Yee and his team have prepared a bountiful spread of Asian favourites for you to celebrate the auspicious season.
Toss your way to prosperity with DIY Prosperity Yu Sheng, Grilled Dalian Abalone in Shell, Steamed Rock Lobster with Old Chengdu Spicy Sauce, Crispy Sea Cucumber and Braised Radish in Golden Collagen, Black Gold Char Siew Black Angus Beef Prime Ribs, Pan-fried Chilli Crab Sheng Jian Bao, and more.
Plus, diners who visit Peppermint for weekday lunch (Monday to Thursday) from 3 January to 27 January 2025 will receive a complimentary Urban Farm Yu Sheng, featuring a combination of abalone and salmon slices, fresh vegetables, and edible flowers harvested from the hotel’s Urban Farm.

This global grilling extravaganza features the Alfresco Swing Grill on weekend dinners, where you can savour flame-grilled favourites like 90-Day Grain-Fed Black Angus Beef Prime Rib, Miso Butter Prawns, and Baby Spring Chicken in an open-air setting. At its heart is the showstopping Brazilian Churrasco, with highlights such as Marbling Beef with Chimichurri, Grilled Chicken Sausages, and Smoked Duck Breast, all bursting with bold, zesty flavours.
Explore a world of flavours with Moroccan specialties like Pot Roasted Whole Lamb and Sustainable Grilled Whole Giant Barramundi, alongside Mediterranean delights such as Salt-Baked Whole Salmon and Baked Seafood in Papillote. About The Chef
Chan Tuck Wai, Executive Chef, PARKROYAL COLLECTION Marina Bay, Singapore
Chef Chan Tuck Wai has more than 20 years of professional culinary and kitchen management experience. A champion of creativity and innovation, Chef Chan constantly seeks to create new and intriguing dishes
Chef Chan is also a respected member of the Singapore National Culinary Team, bagging more than 20 international awards, including the Gold Medal at the World Association of Chefs Societies World Congress 2012 and the Best Chef Award at Food & Hotel Asia 2012. Most recently, he attained the Executive Chef of the Year award at the World Gourmet Awards 2019.
In addition, Chef Chan is also the Approved Judge, certified by the World Association of Chefs Societies, having judged at international competitions like Ultimate Chef Challenge, Thaifex 2016 in Bangkok, Thailand. He also held the appointment of Chief Judge at the inaugural Yangon Young Chef Challenge 2013, held in Myanmar.Chef Chan was also invited as a Guest Chef to cook for various Heads of State and foreign delegates at the Istana, for Singapore’s 50th National Day function, hosted by the President of Singapore.
Leon Yee, Chef de Cuisine, Peppermint
Chef Leon heads the kitchen of Peppermint, overseeing the daily kitchen operations, from menu planning, food cost and inventory management to quality assurance, and is personally involved in the hiring, training and development of all kitchen staff in Peppermint.
He was profoundly influenced from young by his mother and Peranakan grandmother, incorporating precious tradition and knowledge gleaned from countless hours in the kitchen growing up, together with his professional culinary training, Chef Leon strives to improve and innovate upon his repertoire, constantly experimenting with different ingredients and techniques to craft interesting new recipes.
Despite his relative youth, Chef Leon is no stranger to winning, with notable accomplishments including a Gold Medal at the Food & Hotel Asia (FHA) Singapore 2012, the Gold Medal and Overall Champion (Defending Champion) at Luxembourg Expogast World Cup 2014, and a Gold with Distinction Medal at FHA Singapore 2016 – awarded only to participants with perfect scores.
