If you only have time for one bar in Parramatta, go with Time Out’s pick for Neighbourhood Bar of the Year—Uncle Kurt’s. Patrons say the bar reminds them of New York in the 1980s, and they’re not mistaken. 

"I spent time in Brooklyn, Williamsburg, Bushwick and Clifton Hill [in New York],” says owner George Makram.”I tried to find the look and feel I was after, as well as the service style, food, and drink." 

The result is a hip (yet unpretentious) small bar that fully deserves the affection of its regulars. Don’t miss the handcrafted cocktails here, as plenty of care goes into each creation. 

"It's like liquid cooking," says Makram. "We make our own syrups, infusions, tinctures, bitters, and perfumes. We dehydrate fruits and vegetables ourselves. We carve our own ice daily."
