The Role
We are seeking a Chinese Chef to lead the culinary operations of our premier Chinese restaurant at Pan Pacific Hanoi. This is a full-time, on-site role based in Hanoi. The Head Chef will oversee menu planning, food preparation, and presentation, ensuring authentic and high-quality Chinese cuisine. Responsibilities include managing kitchen staff, monitoring food costs, maintaining hygiene and safety standards, and collaborating with management to enhance the dining experience. The role requires creativity in menu innovation as well as a commitment to delivering exceptional guest satisfaction.
Kitchen Operations & Quality Supervise all food preparation across Chinese kitchen Ensure consistent quality, presentation, and taste aligned with hotel standards Monitor hygiene, food safety, and compliance with local regulations Maintain proper food storage, labeling, and food safety practices
Planning & Cost Control Manage food cost and operational expenses Plan staffing, inventory, and production based on business levels Monitor kitchen performance and recommend improvements Collaborate with Purchasing on product quality and pricing
Leadership & Team Development Lead, coach, and develop kitchen team members Organize regular briefings and team meetings Drive training programs to enhance skills and productivity Support recruitment and talent development initiatives within Chinese kitchen
Menu Development & Innovation Plan and develop menus aligned with market trends and guest preferences Test new dishes and ensure innovation across outlets Maintain updated recipes and food presentation standards Coordinate food promotions and seasonal offerings
Collaboration & Communication Work closely with F&B, Purchasing, Stewarding, and other teams Engage with guests and respond to feedback Monitor competitor trends and adapt strategies accordingly Participate in departmental and management meetings
Talent Profile
Strong expertise in Chinese cuisine with multi-outlet experience Proven leadership in hotel or high-volume F&B operations Solid understanding of food cost control and kitchen management Knowledge of food safety, hygiene, and local regulations Creative mindset with a passion for innovation and excellence Strong communication and team management skills
