An Epicurean Discovery of Hokkaido

Singapore, December 2014 – Embark on a culinary discovery of Hokkaido with three new eight-course kaiseki presentations at Keyaki, each crafted to highlight the rich and bountiful winter produce of Japan’s largest prefecture. Available for lunch and dinner from 6 February to 6 March 2015, guests may select from the Hokkai, Donnan or Hakodate menus designed by Chef Hiroshi Ishii (石井博) to showcase the finest seasonal produce and seafood from Hokkaido. The prix fixe menus start from $160.

Highlights from the menus include Ishikari Nabe (Salmon Miso Hot Pot), a heartwarming delicacy traditionally served during the winter months in Hokkaido. This simmered dish comprises salmon, seasonal vegetables and Hokkaido potatoes simmered in a savoury miso broth, presenting a harmonious pairing of produce from both land and sea. Grilled Kinki Fish, prized in Japan for its succulent meat and creamy consistency, is lightly sprinkled with salt and gently grilled, enhancing the pure taste of the fish and infusing it with a smoky aroma while creating a deliciously crisp skin to contrast the delicate meat. Snow Crab, native to the Northern Pacific Ocean is enjoyed for its delicate texture, sweet notes and distinctive snow white meat edge in brilliant streaks of red. Available on the Hakodate menu, the Snow Crab is simmered to slowly draw out the fragrant flavour and enhance the exquisite quality of the meat.
