Named after John Portman, the world-class Architect who designed the hotel building in 1987, the name is both a tribute to Portman and his legacy, and a recognition of the timeless, cathedral-like atrium that provides the environment for the bar and the hotel’s welcome space.

During the day, a stream of natural light pours in through the atrium skylight, bathing the space in a warm, welcoming glow - perfect for a pensive speciality-grade morning coffee or a nature-inspired afternoon tea with friends, featuring top-shelf international teas and delicate, delectable bites fresh from the kitchen.

Resident Mixologists spin from more than 90 labels of whiskies and other top-quality spirits into both classic and unique signature cocktails. Inspired by the hotel’s Urban Farm, these cocktails embrace the ‘farm-to-bar’ concept, and are designed around specific fresh herbs and edible plants, drawing their flavours from the beauty of nature.
