About the Drink

The ‘Dawn to Dusk Sling’ is a toast to the finer things in life, from grand affairs to the most intimate moments. A cocktail that encapsulates the enhanced Pan Pacific DISCOVERY unique experiences, that likewise, can be enjoyed at any place and at any time of day, from dawn till dusk.

This specially curated cocktail is reinvented with inspiration from the iconic Singapore Sling, in celebration of the diverse local experiences one can discover as a Pan Pacific DISCOVERY member.

 

Ingredients

 

45ml London Dry Gin or Chamomile Tea

10ml Amarena cherry syrup 

15ml Pineapple juice

15ml Lime juice

15ml Orange Oleo Saccharum*
(500g Orange peel without pith & 300g Fine sugar)

15ml Beer Reduction syrup macerate with fresh ginger*
(400ml Tiger beer, 200g Fine sugar & 30g Fresh ginger) OR Honey with ginger

 

*Additional preparation required.

How to Prepare Your Cocktail

1. Combine all ingredients except Amarena Cherry syrup into shaker.

2. Filled rocks glass with ice and pour in Amarena cherry syrup.

3. Shake cocktail with ice and double strained into the glassware.

4. Garnish with cherry.

Preparing the Additional Ingredients
 

Orange Oleo Saccharum

 

500g Orange peel without pith 

300g Fine sugar


1. In an airtight container, add fine sugar and express orange zest in the sugar and leave the peel in.

2. Seal and let it sit at room temperature for up to 6 hours or until the sugar is fully dissolved. 

3. Strain and store.

Beer Reduction syrup with ginger

 

400ml Tiger beer 

200g Fine sugar

30g Fresh ginger 


1. Reduce beer by heating over medium-low heat for 200ml of reduced beer. Skim away any foam that form. 

2. Add sugar and dissolve.

3. Add fresh ginger and vacuum pack both ginger slices and beer syrup. Sous vide at 44°c for 2 hours.

4. Strain, let it cool, and set aside.
