The highlight of the buffet is the Hay-Smoked Grilled Wagyu Beef Belly, available exclusively on weekend dinners. Another standout is the 8-Hour Slow Roasted Whole Veal Shank with Charred Onion Sauce—a hearty centrepiece that reflects the buffet’s focus on rustic, slow-cooked dishes.
Available exclusively during dinner service, guests can also look forward to the Grilled Thai-Style Regionally Sourced Seafood Wrapped in Opal Leaf, a delicate dish that melds traditional Thai flavours with a sustainable touch.
Delight in Moroccan flavours with succulent items such as Pot Roasted Whole Lamb, spiced to perfection, or Sustainable Grilled Whole Giant Barramundi for a unique take on aromatic Middle Eastern cuisine. Alternatively, indulge in Mediterranean favourites, including Salt-Baked Whole Salmon with Urban Farm Basil and Preserved Lemon, Salt-Baked Whole Sustainable Seabass, and Baked Seafood in Papillote, showcasing the region’s vibrant coastal influence.
