In celebration of Singapore’s 60th birthday, Portman’s Bar presents a Singapore-inspired Afternoon Tea available from 18 July until 10 August 2025, where nostalgic and well-loved local flavours are reimagined in delightful, unexpected ways.

Begin with a traditional teatime staple given a local twist — the Kopi Scone with Clotted Cream — before moving on to a playful medley of savouries. Highlights include the Old School Western Chicken Chop, reimagined as a bite-sized favourite in a fluffy polo bun, a crispy miniature Yam Basket filled with sautéed seafood and cashew nuts, and a Rojak-style You Tiao topped with turnip, pineapple, and garden-fresh starfruit from the hotel’s Urban Farm. Each bite tells a uniquely Singaporean story, complemented by fresh herbs and edible greens grown right within the hotel.

Sweet endings include a delicate Bandung Rose Bavarois, a rich Durian Cheesecake Gâteaux with Pulut Hitam, and a fragrant Pandan Coconut Financier made with fresh pandan leaves harvested from the hotel’s Urban Farm. The experience concludes with a nostalgic tableside gueridon service featuring beloved local desserts such as Liu Sha Bao and Chendol — a charming finale to this Singapore-inspired tea.
